Considering all sort of silent policemen popping up everywhere, what would be the best riding height
for an Exige S1 mainly used on street?

Standard is, I believe, 112mm front/122mm rear.
Mine is set to 110mm front, 115mm rear with Ohlins spring rates of 235 lb/in front, 325 lb/in rear.
I try to avoid roads with policemen (real or otherwise) or any other sort of speed humps installed… 
I run standard heights, generally it’s fine but the number plate catches on occasion, I have set it a bit lower as an audible warning. Car park exit ramps can have some steep inclines. Going too low could be a problem with the mot brake tests.
