Ball park figure for how much a set of performance pack Exige seats should cost (if I wanted to put the seats in a touring pack car in order to have harnesses)???

Harder than lego, but easier than mechano. Just make sure that you check your existing subframes will work when buying.

Standard OE seats don’t have the cut outs in them that are necessary (as in a safety sense) to utilsise shoulder harnesses.

Totally agree, using harnesses with the standard seats isn’t a good idea as they spread the harness too wide at your neck.
If you want a cheap alternative to changing the seats I’d consider these from Sector 111
