Assuming the all the under panels are installed, what part of the car is resting on the rear jack stands? I don’t know that trick.

Beto, it’s just a version of these:-
I bonded some rubber matting onto mine to stop any damage to the chassis and also stops the car slipping.
It goes on the cross beam just in front of the main undertray. It’s a bit of an art getting the car up onto it, but I much prefer these to some of the axle stand balancing acts you see.

Can someone plz tell me what do all racing cars have on the top of left wheel cover near the cabin. It looks like some pipe showing from inside.
Is it some kind of additional air intake?
I believe it’s an air intake to cool the brakes/hubs. If I remember correctly, there was an issue of cooking the wheel bearings and this was one of the mods introduced to fix the problem.
