If it’s an OP day with tuition and FULL hospitality, then it could be a fair’ish deal, but if it’s a minimalist day of 2 x 20 minute sessions then the seller should be shot.

Trackdays aren’t a cheap hobby - think of the fuel, tyres, pads & discs and that’s only the consumables.
