Damon you seem to hesitate after your foot is covering the pedal anyway. Not sure how having an extension to the foot rest would make any difference to that. My concern would be whether it would cause your knees to be nearer the steering while foot is on the rest.
Damon adding a higher clutch rest wouldn’t save you any time. The time it takes you to move your left foot from rest to the clutch doesn’t (well shouldn’t) affect the amount of time your right foot is on the throttle or brakes.
The only advantage I can see is if you are stablising yourself heavily with your left foot on the rest. But then if this is the case your harnesses aren’t doing their job.
The key to good foot work is being able to move your feet quickly, but precisely while still being smooth and progressive with the controls. Moving quickly but still being smooth is the hard part.

Yes that would be an issue but I am aiming to counter that with the tallman seat brackets and the removalable steering wheel boss bringing the steering wheel a little closer.
If you can imagine it I would sit lower at a slightly more reclined angle.
Yes I’ve got those seat rails in my car. As you are reclined and there is limited space behind the seat to the harness bar you end up with your backside nearer the pedals and hence your legs more bent. Bringing the clutch rest closer will make this more pronounced. I’ve already moved the wheel closer by about 5cm and this helps, any more and you wouldn’t be able to get the indicator stalks without taking your hand off the wheel.
If you’re seriously considering it perhaps you could get some 2x4 and attach a length to the existing rest, being care that it doesn’t come off and under the brake pedal. Just to try it out.
If you are looking for a final setup, you might consider the center console from a LHD car as this is more of a large triangular shape that comes up to the underside of the dash. You could then attach some Aluminium angle at the position of your choosing.
