Glad you had fun, chaps. Chutney recipe on the way asap.
Great pics and run out guys.
You want some walnuts Thommo?
Apple and walnut chutney
25g/1oz butter
half an onion, finely chopped
300g/11oz apples, peeled, cored, roughly chopped
60g/2 and a half oz sultanas
half tsp English mustard powder
half tsp ground ginger
110g/4oz dark brown sugar
300ml/11fl oz malt vinegar
150g/5oz walnut pieces, roughly chopped
salt and freshly ground black pepper
Preparation
Heat the butter in a non-reactive frying pan until foaming, add the onion and fry for 2-3 minutes, or until softened.
Add the apples and sultanas and fry for a further minute.
Add the mustard powder, ground ginger and sugar and cook for 2-3 minutes, or until the sugar has caramelised.
Add the vinegar and bring the mixture to the boil, then reduce the heat until the mixture is
simmering and simmer for 5-6 minutes, or until the volume of liquid has reduced.
Add the walnuts and simmer for a further 4-5 minutes, or until the mixture has thickened and the apples are tender.
Season with salt and freshly ground black pepper and set aside to cool.
Spoon the chutney into sterilised jars, seal and set aside to cool.
PS: I kept mine in the fridge for a few days them froze it in portions. Seemed to defrost and taste OK, thereafter.
Sorry, forgot to reply re nuts . . yep, wouldn’t mind a bag. Maybe collect them at the Christmas/New Year meet if we’re still on for that. Ta.
Sorry guys, was just a bit too far and a bit too wet on this side of the country Sunday morning, decided to stay tucked in bed, try to get across for the main xmas meet.
Will bring you some at XMAS meet Steve (still a few thousand left )
Hope you can make the XMAS meet Gav.
Good night out on Saturday?
I think you mean “in” not “out”, Steve!
